The former Mill House restaurant in Champion was scheduled to open Wednesday as Cindy Lou’s BBQ. Cindy Leibhart and Bill Bardsley have been cleaning the restaurant and lining up supplies for two weeks.
The restaurant, which will be open for lunch and dinner from 11 a.m. to 8 p.m., will feature pulled pork, fish and chicken sandwiches, hamburgers and cheeseburgers, a noon special and an all-day special, Leibhart said. “It will be homemade food,” she added.
The bar will eventually open, but Leibhart said a liquor license is pending. Take-out food is available by calling (308) 882-2963.
Cindy Lou’s BBQ will be open a few weeks before the partners determine which day they will be closed, and if serving breakfast is an option. They will staff the restaurant themselves at first.
Leibhart’s barbeque trailer, which she has sold meals out of, will not be seen as frequently, she said, but will still park at the Chase County Fair and other special events.
The Champion building is owned by Ryan Johnson, who opened a restaurant and bar in the former Champ Inn, originally operated by Wayne and Sharon Raasch. He then leased it to Christy Boggs, who opened The Mill House.
